And the secret recipe is???
Low and slow. Oven 150c for 4-ish hours, deep roasting dish covered in foil.
I like to use a basic seasoning/rub of salt, pepper and ground fennel seed, and put about a cup of apple cider in the pan at the start (instead of stock) and use the cider pan juices for a gravy base at the end.
Can also skim off the fat from the pan part way through and use that to roast some veggies.Of course if you also want crackling, then that's a different process!

I think your miscommunication about it being a "scam" is anyplace that would sell by volume rather than weight.
obviously pulled meat + sauce is going to be less total volume of meat over just regular meat….
that doesnt mean its a scam.
Buy a cheap, tough cut of meat with lots of connective tissue, slow cook it until it's soft.. pull it apart and mix it up with the cooking juices = pulled beef/pork/lamb

More correctly it is Boston Butt. Bonus points for knowing how it got that name.

No but it's very similar, basically have to instruct the butcher to remove all bones but the blade.
So it's on the bone - how much meat after I take out the bone and skin/fat to cook some carnitas with the meat?

Better to cook the whole thing low and slow then remove bones. Meat is much nicer cooked on the bone.
Perfect to go with the cheap cabinet smoker at Aldi this week.
