          Lucky no one told me. I regularly cook defrosted steak to 53°C and haven't had any problems.

          Could you please explain why?

            @OzBragain: Couldn't find anything about having to cook it to well-done after freezing. If anything, you'd think freezing it would help in killing whatever it's carrying. Cooking straight from frozen, without defrosting, might give better results though, according to 1 experiment that 500 "news" sites regurgitated.

        Half an inch thick. Shot an e-mail through to them to see if they can sort me out. Usually if I'm buying premium steaks like this I assume they're going to be at least an inch thick. Marbling is amazing though.
