Shot extensively with both Fuji and Sony systems, they're quite different systems in terms of their philosophy.

I find that Sony cameras have better technical qualities, not surprising given the full-frame sensor, better AF…etc. and the amount of money that Sony (a huge conglomerate) is able to pour into winning the camera space.

Fujifilm is an enigma, and buying into the Fuji system can be a bit of a frustrating experience, but it's all part of being in a system that's a bit more quirky. Fuji doesn't have quite the IQ and AF performance of Sony, but far more than good enough (even for professional usage), and has a decent lens lineup. I like Fuji for its quality prime lens options, and for their tactile dials and shooting experience.

Sony has the better autofocus and video capabilities, but if you're after a pure photography setup the X-T5 is a pretty compelling choice. Fuji is mainly focused around APS-C, which means they've built a very capable platform, especially in the range of lenses available. The smaller sensor also allows them to downsize the bodies and lenses, so its an excellent pick if you're after a compact setup. The manual dials add to the experience, making it a bit easier to adjust settings on the fly. The classic styling of Fuji cameras compared to the usual DSLR styling you see from Canon or Sony also lets you shoot less conspicuously for street settings.
