We are vegetarians and we struggled a bit with identifying the vegetarian food and communicating with the staff. While we were on tour our guide helped with ordering food. Many times we were able to get some dishes customised. However, requesting the same on our own using the translate apps was quite difficult and we gave up a few times.
Our Beijing guide gave us a card with I am vegetarian written in Chinese on the first day. That also helped a lot in communicating at the restaurants.
Also, you will be mostly be eating stir-fries for breakfast lunch and dinner as the options are limited. We took some instant soups, pastas and some snacks with us that helped on some days.
Apart from that in Beijing we found an Indian restaurant with clear vegetarian options and English speaking staff. In couple of other cities we went to pizzahut and customised a pizza to remove meat. The staff spoke decent enough English to understand our needs.
