          I don't see anyone mentioning any 'Heart Tick', 'Kosher' or any other certifications on food posts, and they are no different.

    I got 2 of these when they were on sale last time. I wouldn't touch them again, the time and effort that you put into cooking and cleaning let alone the amount of meat you get off them is not worth it. Spend a bit more and go get it already cooked from one of those asian specialty shops :)

    • I confit a couple of ducks every winter and always get much more value out of buying two ducks than what it costs to buy 4 confit legs. For two ducks ($36) + 200g pot of duck fat ($6), i get:

      4 Confit legs
      4 duck breasts
      3 litres duck stock
      enough left over fat for several trays of duck-fat roast potatoes.

      To buy 4 confit duck legs is around $50, while to buy 4 duck breasts would cost another $30. I'm pretty much $40 ahead just from buying the ducks and processing myself, and if you want to put a price on the stock and duck-fat roast potatoes, then thats even more value right there. A little time pays a handsome reward here.

      • You don't really need to buy the duck fat. If you are going to the trouble of breaking dow the duck yourself, there is usually heaps of fat in the neck and around the cavity that can be trimmed then rendered down.

        • Yep, you're right. I render the fat from the carcass, but find I still need more to confit (i.e. cook , then preserve) the legs in their own fat. I confit using a slow cooker - so simple, but does need extra fat to cover the legs.

      Time and effort? I just put mine in the oven for a bit and then took it out again. Was perfect.

    Did you know that most ducks bred for their flesh are raised in cramped sheds (just like chickens) and never, ever get to experience wading in water?

    • No one seems to discuss free range ducks. But I imagine them swimming is a nightmare for health/hygiene.

      1mtr X 1mtr (1 bird per sq mtr) has become a standard for chickens. 21cm X 29.7cm was the Luv-a-duck standard. That's 16 ducks per square metre!
