  • For the uninitiated, there's not much meat on these things, at least compared to a chicken.
    I don't bother with them now … regardless of price.

    • Very hard to debone too. The meat sticks to the bone very well. I did 2 at Christmas for duck pancakes, I won't do it again for all the effort it took to get the meat off the bones. For the record I blanched mine, then cooked them in the charcoal Weber.

      EC Kitchen is like $40 (Four-Course Peking Duck Banquet for Two ($35)) - that deal's often around and quite good.

        I havent tried before but i heard it takes a while to make the skin crispy. I've actually been to EC Kitchen using the groupon voucher and it was ok for the price. My issue with many Peking Duck places like Old Kingdom and Simons is they simply rip you off. I have no idea what they do with the duck meat after they carve your duck at the table but it certainly doesn't end up in the extra dishes they make for you.

          I've been there a few times and Simon served us. I've had no issues but he was probably in a good mood.

          I honestly couldn't tell the difference in quality with the Peking Duck between the two restaurants. But for some odd reason both restaurants make equally terrible dishes using the meat from the carcass. Bland and oily noodles/rice and the soup had way too much salt and msg. How hard is it to make decent fried rice with duck meat.

    How do I get this frozen duck to become a tasty roast duck? Any tips for a first timer?

      for crispy skin u need the duck to be bone dry before you put it in the oven.
      easiest way i think is to open the packet and place it in your fridge uncovered for a day to dehydrate it a bit

      • Can you use baking soda? I have done it with chicken wings to make them crispy.

        • i think the recipe i read said other option was to use salt - not sure how baking soda affects the flavour

    • I found them to be quite oily little buggers, but then i'm not used to dealing with them.
      I probably over-cooked the little guy.

      Most i see of duck is at the park.

      Listed cooking time is for an approx 2.3kg duck, so shorten the cooking time.
      Don't glaze at the end if prefer pure crisp and no sweet.

    I bought a whole 2.1kg duck from Woolies for $9.00. Roasting the duck will render its fat to the bottom of the pan and you will get in excess of 200g of duck fat. Great for roasting or frying potatoes or making duck confit. Coles sell 200g of rendered duck fat for $5.70.
    So…….. my whole duck cost me $2.30 and 200g worth of duck fat @ $5.70 OR,
    $9 whole duck with free duck fat worth $5.70

    Bargain!!!!!!

    I bought 2 whole ducks from Woolies, plus another 3 packs of duck breasts from Coles.

    Ducks in Australia is way too expensive, so was in Thailand, I had some duck while I was in Bangkok last time, 120bt/aud5 for a very tiny portion in a well known though small Chinese restaurant. It was tasty, but a bit expensive. Even more surprising was in Maya shopping mall, Chiangmai, I was thinking about taking away a whole duck and enjoy in my condo, the girl asked for 2000baht/70-80AUD, ended up having a small bowl of noodle soup with few slices of duck meat. Then I went back to China, and found this supermarket selling well roasted duck 1kg for only 13RMB/2.5AUD, you bet I had a lot of duck.

  • There is not much meat on these, I roasted one of them in my weber a couple of weeks ago.

    Ask for a rain check if there are none in stock.
    Hopefully they don't write 'frozen' and you can pickup a fresh one instead.
