What do u mean? I thought the apple watch with cellular only supports esims? Not all esims work through it?
I think watch esims have to be attached to a phone sim or phone esim, and the telco has to support watch esims
You have to configure the watch with an iPhone and then if you want to activate cellular it shred your number for $5 a month when you are on an eligible post paid plan through only Optus, Telstra and Vodafone.
There’s a new setup introduced last yearish where you do family setup and give them their own number but the only operator that supports that is Truphone
