I think general recommendation is to buy one item at a time or you'd get into the trouble of cashback not working.

why is adidas cancelling orders?
Probably oversold (or allocated to a store that doesnt actually have the stock / oversold / cant be bothered filling the order).

And this discount is applied to the already adjusted price. So I just searched for pairs that had either a 40% or 50% discount in the store. Added them to the cart. The outlet added a further 40% off.

Yep. Plenty of good deals. I had 6x pairs in my cart, but when I realised the 40% wasn't applied to the full price pairs I only bought 4x.
But that took me up to level 2 AdiClub and a 20% coupon, so went back and bought the other 2x pairs. Which then took me to AdiClub 3 and a 25% coupon!
