I've made multiple briskets using the snake method and coconut heat beads on my webber. Turns out 😋. A must is a wifi thermometer to help keep an eye on temp in different spots, the one on the lid can be misleading.
Hey, I have both so I think I can help answer.
Basically the WSM is fool proof and can do long smokes (10hrs) without adding any charcoal and temps are pretty much constant throughout the entire session.
The Kettles can still smoke, but they won't last as long unless you add fuel/charcoal through out your cook. The temps I find are harder to maintain unless you keep an eye on it.
Also the Kettles have a lot less room between the charcoal and your food, so temps are harder to forecast when you have lots of food in there since the closer the food is to the heat, they'll be hotter.. compared to the bullet smokers where there is a deflector and large distance between the food and heat, it's much more consistent temps for your food regardless of positioning.
Basically, get both! They both can grill and smoke, but each do one better than the other.
